Kimchi Fried Rice (Kimchi Bokkeumbap) is a quick and flavorful dish made with aged kimchi, rice, and savory seasonings. Itโ€™s the perfect way to use up leftover rice and enjoy a mild yet bold Korean taste thatโ€™s great for New Zealand kitchens!

Ingredients (2 servings)

  • 2 cups cooked rice (about 400g)

  • 1 cup well-fermented kimchi (about 150g, fresh kimchi works too)

  • 1 tbsp gochujang (Korean chili paste)

  • 1 tbsp sesame oil

  • 1 tbsp cooking oil

  • 2 eggs (optional, for topping)

  • 1 tbsp chopped green onions (optional, for garnish)

Instructions

  1. Heat cooking oil in a pan and stir-fry the kimchi until softened and fragrant.

  2. Add gochujang and mix well.

  3. Add cooked rice and stir-fry until everything is evenly combined.

  4. Top with a fried egg and sprinkle with green onions. Serve hot and enjoy!
