Japchae (Korean Glass Noodles with Vegetables)
Japchae is a beloved Korean stir-fried noodle dish made with colorful vegetables, sweet potato glass noodles, and a perfectly balanced soy-based seasoning. Ingredients (2–3 servings)

100g sweet potato glass noodles

1/2 onion (thinly sliced)

1/2 carrot (julienned)

1/2 green or red bell pepper (julienned)

100g beef or mushrooms (optional)

3 tbsp soy sauce

1 tbsp sesame oil

1 tsp sugar
-
1 tsp chicken stock powder (dissolved in water)

1 tsp minced garlic

Sesame seeds and chopped spring onions (for garnish)
Instructions

Cook the glass noodles in boiling water for about 15 minutes. Drain, rinse under cold water, and set aside.

In a heated pan, stir-fry the vegetables, meat/mushrooms, and minced garlic with a little oil until they begin to soften.

Add soy sauce, sesame oil, sugar, and the dissolved chicken stock powder. Stir-fry together until the flavors are well absorbed.

Add the cooked noodles, toss everything together, and stir-fry for another few minutes until evenly combined.
