Laksa is a beloved Southeast Asian noodle soup with a fragrant coconut curry broth, chewy rice noodles, and a mix of toppings like prawns, chicken, and fresh vegetables. With this simplified recipe, you can recreate restaurant-style Laksa at home using locally available ingredients. Quick to prepare yet full of flavor, it’s perfect for family dinners or cozy weekends.

Ingredients

  • Good Today Vietnamese Style Rice Noodles 200g – 1 pack
  • Laksa paste – 3 tbsp (available at major NZ supermarkets)
  • Coconut milk – 400 ml can
  • Chicken stock – 500 ml
  • Cooked chicken breast (shredded) – 150 g
  • Prawns – 150 g (peeled and deveined)
  • Bean sprouts – 1 cup
  • Vegetables: baby spinach, bok choy, or green beans – 1 cup
  • Boiled eggs – 2 halves (optional)
  • Fresh coriander & lime wedges for garnish

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat 3 tbsp Laksa paste for 1–2 minutes until fragrant.
  3. Add coconut milk and chicken stock. Stir well and bring to a gentle boil.
  4. Add chicken and prawns, simmer until prawns are cooked (3–4 minutes).
  5. Add vegetables and simmer briefly until just tender.
  6. Divide noodles into bowls and ladle the hot Laksa soup over them.
  7. Top with bean sprouts, boiled egg, coriander, and a squeeze of lime.

Suggested Uses

  • Swap chicken for tofu to make it vegetarian.
  • Add chili oil for extra spice.
  • Use leftover roast chicken to save time.
  • Serve with garlic bread or roti for dipping.
