
Spicy Stir-Fried Pork Belly (Jeyuk Bokkeum)
Savory, spicy, and full of umami – this stir-fried pork belly dish is simple yet irresistible. Thinly sliced pork belly absorbs the marinade perfectly, delivering tender and juicy bites. With just a quick stir-fry in the pan, it’s ready in minutes. Perfect as a side dish for rice or as a late-night snack with drinks.
Ingredients (2–3 servings)
- 400g thinly sliced pork belly – Buy here
- 1 onion (sliced)
- 1 spring onion (diagonal slices)
- 1 handful cabbage (bite-sized pieces)
- 1 tbsp cooking oil
Seasoning Sauce
- 2 tbsp gochujang (Korean chili paste)
- 2 tbsp soy sauce – Buy here
- 1 tbsp sugar (or honey)
- 1 tbsp minced garlic (readily available in supermarkets)
- 1 tbsp chili flakes (adjust to taste)
- 1 tsp sesame oil – Buy here
- Pinch of black pepper – Buy here
Instructions
- Prepare the sauce: Mix gochujang, soy sauce, sugar, garlic, chili flakes, sesame oil, and pepper in a bowl.
- Prep the vegetables: Cut pork belly into bite-sized pieces. Slice onion, cabbage, and spring onion.
- Cook pork: Heat oil in a pan, add pork belly, and stir-fry for about 3 minutes until golden.
- Add sauce: Pour the sauce over the pork and stir well to coat.
- Add vegetables: Stir in onion, cabbage, and spring onion. Cook for 3–4 minutes until slightly softened.
- Finish: Serve on a plate and drizzle with a few drops of sesame oil.
Serving Suggestions
- Wrap with lettuce or blanched cabbage leaves
- Serve over rice as a spicy pork bowl
- Add cheese on top and melt in oven or microwave
- Use leftover sauce to make fried rice
