How to Make Easy Tteokbokki

  1. Prepare the rice cakes and fish cakes

Rinse the rice cakes and cut the fish cakes into bite-sized pieces. If refrigerated rice cakes feel hard, soak them in cold water for about 10 minutes. For frozen ingredients, follow the defrosting and cooking directions on the packaging.

  2. Make the sauce

Add the water, gochujang, sugar and soy sauce to a wide frying pan. Stir until the chilli paste is well mixed, then bring to a simmer over medium heat.

  3. Cook the rice cakes and fish cakes

Add the rice cakes and fish cakes. Simmer over medium-low heat for about 8–10 minutes, stirring gently from time to time, until the rice cakes are soft throughout and the sauce has thickened slightly.

If the sauce reduces before the rice cakes soften, add water in 30–50ml amounts as needed. Cooking time will vary with the size and condition of the rice cakes.

  4. Taste and serve

Taste the sauce and adjust the sweetness if needed. Remove from the heat while a little sauce remains, as it will continue to thicken as it cools. Serve warm.

Make It Cheese Tteokbokki

Just before serving, scatter 50g of mozzarella over the cooked tteokbokki. Turn the heat to low, cover with a lid and heat for about 1–2 minutes, until the cheese melts.

Leave a little extra sauce in the pan for a delicious mix of chewy rice cakes, savoury fish cakes and melted cheese.

Simple Tips

  • For less heat, use less gochujang to begin with. Cheese adds a creamy finish.
  • For a sweeter sauce, taste near the end and add a little more sugar.
  • If the sauce is too thick, stir in a splash of water.
  • If the sauce is too thin, simmer uncovered for a little longer.
